I'm looking to teach basic Arduino stuff to middle/high school students outside of the United States, preferably in countries that need a little greater assistance in teaching such a topic. Does anyone have any pointers? Thanks!

There are some efforts I've heard of in Cambodia and VietNam.. these are aimed at local-language young people. This needs a local-language mentor who is willing to do translation. Older students in countries like China may be OK in English. It is accepted that much/most technical chip information etc. is in English.
Some people are using information from the ArduinoInfo.Info WIKI with young people. Examples:
