I searched for data about the sample rate of the interrupts. I would like to know how quick the signal at the interrupt pin is detected and triggering the attached interrupt.
Do you know where I find this information?

Normally, the signal would have to persist for at least an instruction cycle.
It'll be in the data sheet.
