Client and Server runing at the same time

I was wondering is it possible to run a server and a client at the same time with the Ethernet shield

No, but it is possible for a server to make GET requests of other servers, while it is not in the middle of servicing a client request.

Two things can't happen AT THE SAME TIME on an Arduino.

So, you are saying that i can use a Server to serve the requests that arrive and i need to make some GET to a specific URL i can still use that same server?
Assuming that the GET do not collide with serving the requests...

This way i don´t have to instantiate a Client. Correct?

Yes. The Arduino-as-server's focus, when a client connects, needs to be to answer that client's request. When the server has no client requests to deal with, it can initiate GET requests of it's own.

It's a little unusual, and you need to be careful doing it, but it can be done.

What do you think i should be carefull with?

Test code that has both client and server functions. The code runs in a loop alternately checking for input to the web server and input on the serial port. If a g is received via the serial port, a get request is made to another web server and result displayed in the serial monitor. If the arduino web server receives a get request from the contained web page , then the arduino pins are made high/low per the request.
