Quick ways of designing optimal LED matrices?

I'm planning a scoreboard based on blue LEDs, but want to minimise them by using only the ones that'll be used for nice round numbers. Is there a good way to design your grids and work out which grid squares are needed for each number? I was almost thinking of using a spreadsheet maybe to do it, but surely others have good ideas of how to do it? Thanks,

You mean you want help designing the font of the numbers?
How big is the display to be?
I made a display that shows times & scores using 3 LEDs per segment, 2 digits per 80x100mm boards. MAX7221 drives the 8 digits.
