I need to sample an analog signal (200khz) at a minimum of 400khz, and I'm wondering if anybody has a suggestion for a ADC that is easy to work with the Arduino with?

Im working with a signal coming from a 200khz ultrasonic transducer (trying to build a sonar for Android/iphone). I need to sample at 400khz as I would like to be able to perform a Fourier transform the incoming stream and detect if a signal (echo) is present. I recognize the Arduino isn't fast enough, but shouldn't the AVR chip alone be able to handle this type of signal processing?
Thoughts?
