how do I connect 2 7-segment displays vertically and controlled by arduino?

there are many single digit and multiple 7 segment display kits driven by arduino, eg Arduino and 7 Segment LED

But I need a vertical 2-3 digit 7 segment leds but there isn't 1 around. So how do I wire them together? and once i've the wiring figured out, how do I get the wiring sorted out on a breadboard?

The wiring is the same regardless of the physical orientation of your digits.

What size digits did you want to use?

standard ones like these 7-Segment Display - LED (Red) - COM-08546 - SparkFun Electronics

the thing is, how do i fabricate a circuit board to mount these leds such that they are arranged vertically? led kits sold in stores have pre-drilled and pre-etched pcbs to mount and solder the leds.

I would get a piece of proto-board such as this one from sparkfun:

You can then use some fine wire to connect your circuit.
