Any book is good. I have hundreds. The first one, though, is great.

A lot of people recommend Faludi's book, but unfortunately he didn't know enough
to use 5V-to-3.3V level-shifters between the Arduino and the XBee modules. Other
than that, it probably has good info.

There's also plenty of info at www.digi.com, who makes modules.

Yes and yes. Or use current limiting resistors with LEDs.
