I used pcb way on the 4chip z80 board that iv e been playing with. I wasn't quite so lucky on postage, but I was impressed by quality and overall speed of delivery.

I use and recommend elecrow.They are fast and good quality multi color boards.

I've never used more than two layers.
The Z80 board has a Z80, a memory chip (64k), and an ATmega32 (running arduino code) that does front-panel-like things, bootloading the Z80, and all the IO. It's currently running BASIC, figForth, and CP/M.
