I am thinking of buying the starter kit but I was wondering if any Arduino product would allow me to connect or create my own surveillance system with video cameras connected to the internet or recording device. If so some references to the actual cameras would be appreciated.
Arduino cannot process live video, check Raspberry PI.
An Arduino can be used to (remotely) control pan/tilt with servos of a cam.
