Hardware and Softserial both on Baud: 115200

Hardware serial
TX ESP -> TX Arduino
RX ESP -> RX Arduino

I tried this aswell
RX ESP -> TX Arduino
TX ESP -> RX Arduino

There's your problem. You should always connect TX-RX, RX-TX unless you're only using the UNO as a USB-serial converter to control the ESP8266 directly from your computer, in which case TX-TX, RX-RX is correct but only because that's actually still a TX-RX, RX-TX connection with the USB-serial chip on the Uno.

Uno sends out 5V signals. ESP requires 3.3V. You can possible fry your ESP at some point. You might need a logic 3.3V <-> 5V converter.
