Title: capacitive sensor - work with LEDS

I have a capacitive sensor from sparkfun

i'd like to connect this to an arduino uno and have it to control LED RGB strip lighting changing the brightness and colour with two separate controls.
ideally i would turn the capacitive sensor into a strip, is this possible with a copper strip connected to the sensor or foil?!

unfortunately I am very new to arduino, so basically any suggestions of parts needed? resistors? where to put the right wires etc would be very appreciated, or any projects that have been done before
