Hello,
How can I go about sensing water levels above .5 an inch? Im looking to avoid water levels above 0.5 inches and maybe I havnt been doing a good job with my searches, but have not found much in ways of doing this yet.

Just position the detector 0.5" above the normal water level. A simple two probe detector will pass current when the water hits them. Alternatively use a static pressure detector:- http://www.sparkfun.com/products/10221

Or maybe avoid a body of water somehow. Im not sure how this might be possible. If I cant figure out a system for doing this on a free roaming bot, I could just make sure that the bot is being watched and doesnt commit suicide, lol.
