In the Knock example http://www.arduino.cc/en/Tutorial/Knock the resistor is put in parallel with the piezo transducer which might help protect against high current into the analog input but not high voltage (as the example currently states) and is not the reason the resistor is there.  The reason the resistor is there is to act as a pull-down resistor for your analog input so it is not randomly floating, this information should be added to the description.
