Hey @ll :)

I would like to generate sketch code with java and than run the arduino compiler by console.

Till now i found that i have to use ./avr-gcc or ./avr-g++ ( located in /Applications/Arduino.app/Contents/Resources/Java/hardware/tools/avr/bin/ )

First i have to generate a <file>.o - but i don't know how.

Would be great if someone could explain how the compiling by console works.

(i don't want to use any kind of script if possible)

Enable verbose compilation in the IDE. It will show you everything it does when compiling a sketch.
