I know that each component can have a different reflow profile. I have have several components with different profiles on my PCB, how does the reflow process works exactly?

This is something you must consider when selecting components with the intention of reflowing them.

What you might find is that some have a more aggressive profile than others, so you optimize for the least common denominator.  If you have parts that have differing peak temperatures, then you may have an issue...
