What do you use for a Li-Po Battery Charger?  Here is what I've found:

http://www.amainhobbies.com/product_info.php/cPath/1574_116/products_id/217519/n/EcoPower-Electron-65-AC-LiPo-LiFe-NiMH-AC-DC-Battery-Charger-6S-5A-50W

If there are more than 2 wires on a Li-Po or NiMH battery, what are they for?

For temperature sensing, or other electronics / charge management as in laptop batteries, etc.

For multi-cell batteries (7.4V or greater)the extra wires are used to ensure the charge of each cell is correct. If the wires were not available then the cells could not be charged individually and inevitably one of the cells would get overcharged and other cells would get undercharged.

Temperature probes on RC batteries or chargers aren't at all common.

Personally I use the MCP73831

Minimal external components, and flexible usage.
