I need to access the boards.txt and programmers.txt files of Arduino on a Mac running Lion.

Just right-click on the Arduino icon and select "Show Package Contents", and drill down through the subdirectories.

Wouldn't that be:  /Applications/Arduino.app/Contents/Resources/Java/hardware/arduino/    ?
