I am a science teacher and am interested in building a timer utilizing photoelectric sensors to start the timer and record 4 times as the the remaining four sensors are tripped.  The 4 recorded times could either be displayed on a screen or written to a downloadable file to an application like Excel.

First, is this something doable with the Arduino board?  Second, would someone with little programming experience but a lot of motivation (me) be able to figure it out?

Simply yes, and without even the hint of a shadow of a doubt, yes.  And there's heaps of advice on these forums for when you get stuck of course.

What events will trigger your sensors?
