You can use a magnet on a float with magnetic sensors like a Hall Effect sensor or reed switch.  Many devices use a ring magnet around a waterproof tube containing the sensors.

tks for reply johnwasser, but the design of sensor that i need, is something similar to :
http://mbed.org/cookbook/MAX6675-Thermocouple
or just an simple catheter/sounder

You want two things if I understand it correctly
1) detect HOT water
2) its level

1 ==> If you have this DS18B20 - http://arduino-direct.com/sunshop/index.php?l=product_detail&p=151 - you have a water proof one sensor for detecting HOT water
2 ==> John Wasser answered that one above, but

What temperature is the hot water?
==> Some magnetic effects may disappear (permanently) at high temperatures.

Can you tell more about the project?

That's a temperature sensor.  You say you don't want a temperature sensor.

What do you want?
