Hi all!!

What kind of part can i get to detetec very hot water? like an level relay?? there is some kind of that?

You can use a magnet on a float with magnetic sensors like a Hall Effect sensor or reed switch.  Many devices use a ring magnet around a waterproof tube containing the sensors.

or just an simple catheter/sounder

A DS18B20 will go up to 125C.

but DS is for temp.. what i need is for liquid/water... to detect when it as an certain level... with something like steel, :!

You want two things if I understand it correctly
1) detect HOT water
2) its level

1 ==> If you have this DS18B20 - http://arduino-direct.com/sunshop/index.php?l=product_detail&p=151 - you have a water proof one sensor for detecting HOT water
2 ==> John Wasser answered that one above, but

What temperature is the hot water? 
==> Some magnetic effects may disappear (permanently) at high temperatures.

That's a temperature sensor.  You say you don't want a temperature sensor.

What do you want?
