Hi there,
I am new in Arduino.
I would like to create a latte printer like this.
But I dont know how to get the motor signal to trigger the stepper to forward the glass and how to trick the paper sensor there has a paper.

Welcome to Arduino,

As you are new to it I propose you first spend a few days on the tutorial section and experiment with the code to get a feeling of the Arduino language first. What can it do and how it is done. The tutorial include servo examples and you will definitely find some useful parts of code .

2nd, you should tell a lot more about the goal of the project and the hardware you intend to use (types - links to datasheets etc)
The more info you give, what you tried, what worked, what not, what you expected, what you got etc, the better answers your get.

I second what robtillaart said. But to answer your question about how to trick the paper sensor, just block the perticular photointeruptor the detect the paper...
