What are your interests outside of school? The project will be more interesting and larger in scope (and therefore more impressive) if it's something you are passionate about.

Test instruments make fine EE projects.
Multi-channel voltmeter.
Oscilloscope.
Logic Analyzer.
Audio Spectrum Analyzer.
Signal Generator.
Serial Protocol Analyzer.
In each case, you can add complexity by varying the I/O.  Simplest would be to work via the normal serial connection to a PC.  Followed by buttons and a keypad and character LCD.  Followed by a VGA monitor.  Followed by a bare LCD screen.  And keyboards and/or touchscreens...

I say, think of where you want to work.  The pick a project that would be good to talk about during an interview with that company.  Make sure it is something you can accomplish though.

If you really nail the project, you will have something to talk about, that really demonstrates your depth of understanding.
