Do you guys know of any Arduino variant similar to this.

Or maybe someone can show me how to do away with the USB chip on the Stickduino or the Seeeduino schematics.

Sparkfun Arduino Pro mini ?

Sparkfun has been very good at releasing cad files/etc for their arduino-like products.

Note that the size seems to be mostly limited by the connectors to the outside world, so an SMT AVR doesn't actually get you a board much smaller than a RBBB...
