I'm having this really strange problem where my xBees keep pulling the reset pin on my arduino about every 7 seconds.. Any ideas why this would be happening?

you should post more details about the exact symptoms (i.e., how exactly do you see this "pulling the reset pin" happening), and what related configuration parameters you set in X-CTU.

but I think I know what you are talking about.
have you tried typing "ATD7 0" using terminal commands (or instead, disable DIO7 by setting its value to 0 using the X-CTU config screen)

I had some problems on "Arduino auto-reseting" in two scenarios:
1- Some component is trying to get more current an Arduino digital port can source.
2- A segmentation fault or out of memory problem.

Please try to power Arduino with a better power source and verify if your sketch are too big (try a very simple sketch for xbee).
