Shouldn't make any difference.  Arduino Uno will work fine.

I just got one of these FSRs, but have not had time to play with it yet.  I just want a simple digital output similar to a momentary contact switch, 1/0, pressed or not.  For starters, I'll probably try a simple voltage divider with the FSR as one leg, connected to a Schmitt trigger.  Just wondering what other folks might have had success with.

I tried a smaller FSR about a year ago for one of the examples in the book Making Things Talk. Worked great and wasn't hard to use.
