I'm working on a project that uses 3 different RS-485 signals, so I was planning to use UTP cable. The cable will run for aprox. 60 meters (200ft) and the only interference nearby are some power cables for incandescent lighting that run in separated steel pipes.
I know that using foiled cable (ftp) is safer, but I'm pretty sure it's overkill.
Am I missing something?

For RS485, UTP cable should do just fine for 200 foot runs.

make sure you have the RS485 terminating resistors (~120R) at each end of the cable. if you have more than two RS485 devices (i.e. multi-drop)on the cable make sure the terminating resistors are at the node ends.
