Well...I should say I've done the same as draythomp & markbee for a long time(2 Yrs) with different models of xbees... the Xbees are mostly rugged on the I/O's and less so on the input voltage...So Level Shifting might not be actually required... You can still hook up a few resistors and shift it down. You can also check something like this

I emailed the vendor and asked some more details about that board and they said yes the board has a level converter for the digital pins as well.
I'll let you guys know when i buy the boards.I may end up buying Adafruit's Xbee adaptor kits.Lets see.
