Does anyone know the reference how to programming like this guys , because i'm newbie in arduino programming any suggest?, thank's for help and attention.

That Arduino sketch isn't too complex and, like the author, you can skip a lot of interfacing problems if you don't bother to hook up any hardware to the Arduino.  Looks like it reads three analog inputs and spits out the values every few seconds.  Then when it gets serial input that says "BRAIN" it switches to a menu mode.

He says that he stores the settings in EEPROM.  That may very well be true and it's not hard to do.
