I want to use ITead Studio ITDB02 LCD Shield v1.3 and the ITDB02 display mounted on an arduino Uno (and I am quite the noob)

Judging by http://shieldlist.org/itead-studio/itdb02-lcd all pins are used by the shield!

Does that mean that when using the sheild and display there is no way to connect any sensors, LEDs, pushbuttons or anything?

Any help or explanation much appreciated

Looks like you are right.  Every single pin is in use so everything you want to do has to be done in software.  You also have to choose between human interface (touch screen) and mass storage (SD card).  I guess you could program something like a graphing calculator (human interface) OR a dumb digital picture frame (mass storage).
