First, I have a Gameboy advance SP. could I take it apart, and use the LCD for arduino projects? Is it compatable with the drivers?

If the driver chip is built into the screen and you can find a datasheet it should be possible.
You may be lucky enough that some one out there has written a library or chunk of test code you can port to arduino.
The chips however are most probably mass produced with gameboy specific designs and are unlabelled or only internally known by nintendo.

I have an old gameboy colour and I want to do the same thing, I haven't yet checked the screen out for id marks but I hope it is possible too.

There is some gameboy hacking pages around the web, didn't see much focusing on the screen though.
