Can anyone give me any advice as to which go where in a 5 wire stepper motor, I have tried checking pairs
with a multi meter but still tell the difference.

The only way to do it is to try it. If the order is wrong the motor just vibrates a bit. Swap over two of the coils and try again.
repeat the measurements. One wire have to have equal R to other wires, that's common one (5th). Others 2R to each other. It also can be 5phase motor with different schematics.
