Yes, it's similar to a regular pot. You can use two terminals to make a variable resistor (or you can short one of the end-terminals to the center-tap).
Just make sure to stay within the voltage & current limitations for the digital pot. When I hear "rheostat" I think of high-power applications, although that's not always the case.
