Hello, I am new in this forum and also in this Arduino world.

My Question may be odd but I am here to learn about this. so my Question is.

With an Arduino UNO,   how many projects can be built?

What do you mean?  That's like asking, "Using wood, how many things is it possible to build?"  Or asking, "How many paintings could ever possibly be painted?"   That's a ridiculous question.  The answer can only be infinite.

Unless, of course, the OP is asking if there is a limit to how many times the Uno can be programmed?
