Will the standard 16x2 LCD work in parallel mode with a Pro Mini 3.3V? Or do I need a specific model, and if so which one do I need or what do I look for to be sure I am getting the correct one?

What "standard" are you referring to?
As long as the LCD operates at 3.3V, any LCD will work with the 3.3V Pro Mini. Or even an amateur Mini.
I'd get one that specifies 3.3 volt otherwise you may have a problem with a dim backlight and bad contrast, assuming that you are powering it from the regulated 3.3 volt output of the mini.

That's exactly the detail I'm asking about. I did not see, did not notice one that specified 3.3V.
I am planning to run it (and everything in the project) directly from a lithium power pack, so the initial voltage might be close to 6V. As one part has a VccMin of 4V , that will define the lower end. As there are only three pieces in the project, working this way should not be difficult (Pro/Pro Mini, LCD, and Sensor). They all are spec'ed to handle at least a 4-7V input.
P.S. I was going to try not to use the back light.
What gives with the specifications on the 3.3V LCDs? A lot of them list 3.3V and 5V in the same listing.
