The NodeMCU already has a 5V regulator. I don't know what type.
No 5V regulator afaik; it does have a 3.3V regulator - the AMS1117-3.3. This regulator is also available on breakout board, complete with stabilisation caps & on-board power LED, pin compatible with standard TO-220 regulators such as the 7805. Very convenient.
