I have a 3 digit 7 segment display that I would like to tap into and record all values it displays in a txt file. Is this possible

Without a schematic, probably not.
This is a well-known device - did you find any hacks?

Yes it is the same LCD. While there are many videos and blog posts about "hacks", they are simply just changing housing.
