It really sounds like you searched the wrong terms, or didn’t clearly understand what the projects were doing.
There are some fundamentals that you’ll need to understand before starting.
e. g. Common Anode vs C-Cathode,
the method of timekeeping etc.
direct segment drive vs multiplexing.
Pick one project (unlikely to be an instructable), then start from there.
