I think accelerometers are a bit of overkill. You can use a piezo disk as a 'knock' sensor.
It's probably a bit of overkill to have an Arduino and bluetooth transmitter on the back of each plate. Or did you plan to run wires? Wires up the chains would likely get hit by a stray bullet some day but if they are easy to replace the damage might not be a problem.
