I want to keep my Ardunio board, buzzer & LED, away from my ultrasonic sensor around 30 ft.
Will this impact my calculation of distance? or is there any chance of data loss?

Why do you want to keep the ultrasonic unit away from the rest of your hardware.
30ft of wire may cause a problem because of capacitance influencing the output wave form from the sensor.

I am trying to use the Ultrasonic sensor to measure the water level. Considering this if I keep the board close to sensor there may be chances of board damage.
If I use a waterproof case, then the cost gets increased

What ultra sonic unit are you aiming to use, and how will you protect it against the elements of the tank/enclosure?
If you have the ultrasonic unit in the tank, you can have the rest of your project just outside the tank?
Would that make it closer?
Getting your data, no matter what it is, over 30ft will be main problem.
Do you have local power or will yo be running of a battery supply?

You can house your controller in a small Tupperware container. Make a small hole for the external sensor leads and use a bit of hot glue or silicone to seal the hole up around the wires.
