In this schematic for the FTDI, I am going to work it directly into my own board, so if I'm working with a 5 volt system, can I delete the 3.3v wire, remove C1, and just leave pin 17 unconnected?
and if I don't use the signal LEDs, can I leave pins 22 & 23 unconnected, also?

Yes, I've done that before.
The only signal pins really needed are 15,16, 1 and 5.
Pity they don't make a smaller and simpler version of the chip.

Well, they do make a smaller version - the FTDI FT232RQ, package is about 1/2 the size of your pinky fingernail.
Can find it one of the smallest adapter boards I've seen here:
Doesn't break out the DTR signal tho.
This slightly larger board does, and cost less:
Putting that FTDI chip into a SOIC8 or 16 would be great though. But I guess the time for such chips is passing what with USB available native on more and more processors.
I still think a small version of that chip would be good though, as a SOIC it's small but sill easily soldered..
