advice arduino choise

hi to all,

currently im building HHO device, it will be controlled by arduino.

since its my first project need advice about arduino model.

there will be a keyboard start stop, up, down, enter.
setup parameters displayed on lcd.
monitoring voltage, temperature, airflow, timer, amperage that each will be displayed on 2 x 7 segment led display.
and control on/off relay, fun relay, drive mosfet stage to control voltage.

please need your help to choose arduino model, will come later for coding.
