Analog Input Voltage Only Working with a Multimeter

I have a capacitive soil moisture sensor that I am trying to get accurate measurements from an analog input via serial monitor/ plotter. Once I observe the plots from the soil sensor, they seem unresponsive and floating at their own will. When I connect my multimeter to read the output voltage of the moisture sensor while it is connected to the Arduino, everything begins to work appropriately. The behavior observed on my multimeter matches accordingly to the plots on my graph. I also tested the sensor independently of the Arduino, and it is in working condition. Is there something wrong with my Arduino, or is there something fundamentally wrong that I'm doing?

A schematic of the connection of the sensor to the mystery Arduino and a data sheet for the sensor would help a lot.

I added a picture of my schematic as well as three photos of my multimeter sharing the voltage output and ground of my soil sensor(This is the only configuration that allows my analog input to behave appropriately for some reason unknown to me)
