I want to hook up a motion sensor (but I want to do it right with a end of line resistor and monitor it )

The IL300 is a pretty good workhorse. We have a suggested circuit for it:

Anyone know if that IL300 circuit would work for composite video?

Not nearly fast enough. The bandwidth of the IL300 is 200kHz (specified on the datasheet, so practically probably lower) while video bandwidth is much higher.

The Avago HCNR200 and HCNR201 claim a bandwidth upto 1.5MHz... Haven't used them though.

I'm looking at the Avago (great name for a company :)) HCPL-4562 which is specifically called out as being for video isolation. It's not a complex circuit but I was just checking if an even simpler one was available.
