anode and catode on a segment bar led

i can't understand wich one is anode and catode of the 2 rows of pins, they are symmetric and there is no reference. The datasheet seems doesnt clear the question.

Its not symmetric, there is a notch at one end, almost certainly the end with pin 1.

You can test with a 1k resistor and 5V supply to be sure. LEDs are diodes so it you connect them backwards nothing happens (well at 5V or less this is a safe assumption).

It's right there in the images you posted from the datasheet. Look on the lower left hand side, it shows the anode pins as 2,3,6,7,10,11,14,15 and which respective cathode pin it corresponds to.
