Hi need to develop software/hardware to get impulses from encoder, recalculate them to meters/minute and to show the result at the matrix LCD

Do you have a data sheet for the encoder?
Do you have a preference of LCD? A data sheet for the LCD?
Do you have a drawing of the mechanical system? To what is the encoder connected?
Do you have a preference of which Arduino board?
There will be more questions that will need answers before code can be written.
Right now I only have encoder
Omron E6B2-CWZ6C
Board/display can be up to you, but should be available from aliexpress
Speed is calculated via rpm and diameter of rotor (diameter of rotor can be custom)
Speed is in XX,X m/min
So it has to be approximate to decimals
Looks like not the most difficult task
In the future could be great to have the board/display that can input/indicate 3 encoders
