What are YOUR interests? Do you see an issue in these that could be solved? You will find that solving an issue this way, will give a better understanding, and also be a better driver to complete the project fully.

Is this for high school or college level?

Is your deliverable product a thesis and presentation or are you expected to deliver a physical working example of some sort?
How about the evolution of the microcontroller? Start at the beginning before microcontrollers, when we used a uP, PIA, RAM and ROM as separate components. Explain the different architectures and development tools back then. Back then would be the early '80s for me.
Explain in detail how this technology evolved to the present day. Compare and contrast the development process and cost back then to today. What you get for free or peanuts today costs $100s of dollars back then. Introduce the hobbyist level controllers such as the Arduino and Pi. There were many more before them. You kids have no idea how easy it is today compared to 30 years ago.
Driving forward, project, the best you can, where this technology goes from here. How it might be used to solve daily problems either at home or the workplace.
Start with the broad historical picture and then zoom in on the hobbyist aspect. You could zoom in on Microchip and Atmel. How there products started in different directions to Microchip buying out Atmel.
