I'm saying exactly that.
The V2 shield is just an expensive way of buying an HC-05 which is a BT2 device, and not compatible with IOS. The Seeed_BLE shield specifically carries a BLE device, i.e. BT4, which is compatible with IOS.
I only mention this because changing the phone to Android might be a legitimate option, but the code you posted isn't kosher anyway. It is probably OK with BLE, as intended. The HC-05 runs at 38400 in AT mode, while BLE runs at 9600, like the HC-06.
