Arduino Board for Non intrusive load monitoring in University Project

Hi I've been tasked with making a device to put into a household to try monitor non intrusive load by attaching directly to the mains. I need a microcontroller but I'm not sure which to pick. I've done projects with the UNO before but dont know if that is capable for this project as there would be a lot of data.

Any help would be great!!
