Is there a way of change the "model" type of an existing device under Arduino Create?

It's not clear what you're asking. Please provide more details.

All the standard Arduino boards are supported.
Also a few others.

If yours is not in the list then you need to add the board to the wish list thread in here.

There is currently no way to add additional boards such as the ESP series etc.
