Depends on the kind of sensors you are referring to. Analog? Digital? Serial? I2C? SPI?

I think he meant analog input vs digital input. I can't explain better than wikipedia you better google that one because is a common question.
Which Arduino? It depends on the sensors are wether digital or analog.
Start with a UNO to get some experience.
Progress to other Arduinos boards as need requires.
I like the Atmega1284 in final designs (consider a 1284 Weeney or Bobuino2 made by Crossroads.)

Pick the Arduino to match the sensors... If all 5V sensors, then Mega2560 will serve you well and provide far more resources than an UNO. If all sensors are 3.3 Volt, you should consider the Due and make interfacing easy on yourself.
If sensors are a combination of 5V and 3.3V you need to search thee forum (or Internet) on 3.3V and 5V voltage conversion methodologies. Sparkfun used to have a few pertinent links.
The 16K of SRAM on the Mega2560 will give some headroom over the 2K on the UNO. Plus the extra I/O is nice. The Due is ARM based, so do your research and make certain your needed library is supported fully on the DUE.

While working for at&t, I would have loved to have an Executive Mute System. The insanity that comes from these self-proclaimed experts is frightening.
