Is there some way that I could use an Uno, a GPRS shield, and some other shield to create a WiFi hotspot, if so could you comment what shields I should use and how it could be done? Thanks.

there is a wifi module available in market. however, for your project,one way is to convert your arduino into usb device(by flashing it) which then be recognised by your computer os as wifi device.please provide more info about your project.
remember, doing it requires a good hold on programming and a good knowledge of how wireless things works.

It would be to provide wifi to someone's iPod of iPhone without plugging it in to the arduino.
